Izushi Sara Soba Kanbei is a famous Izushi Sara Soba restaurant located in the historic castle town of Izushi-cho, Toyooka City, Hyogo Prefecture. The restaurant features a quaint exterior, and when you enter the restaurant, there is a space where you can watch the soba being made through the glass, so you can see the craftsman's skills up close. Kanbei's soba is made by grinding carefully selected domestic buckwheat seeds in a stone mill, and the flour ground that morning is quickly pounded by skilled craftsmen. They are particular about the "three fresh" aspects of "freshly ground, freshly pounded, and freshly boiled," and offer a special dish that brings out the original aroma and flavor of the soba to the fullest.

The characteristic of Izushi Sara Soba is that the soba is served on a small white Izushi-yaki plate, and is eaten with your favorite condiments and soup stock. Kanbei is particular about condiments, and sometimes serves raw real wasabi, which further enhances the aroma of the soba. We recommend first tasting the flavor of the soba simply with salt, then enjoying the change in flavor by adding various condiments such as eggs, grated yam, green onions, and shichimi pepper. The deliciousness of the soba is so good that you can eat as many as you like without getting bored.

[Trivia]
The roots of Izushi Sara Soba lie in sobakiri, which was brought from Ueda, Shinshu during the Edo period. At the end of the Edo period, the style of serving soba on a hand-salted plate began so that it could be easily served at food stalls, and later the local Izushi ware small plates were used, resulting in the current form.

Kanbei is located in the center of Izushi Castle Town, so after your meal, we recommend taking a stroll around the surrounding historical buildings, such as the "Tatsuko-ro" and "Izushi Castle Ruins." In particular, the view of the castle town overlooking the Izushi Castle Ruins is spectacular.
