This popular Shinshu soba restaurant in Matsumoto city is renowned for its carefully crafted bowl of thinly sliced 100% soba noodles made with a 93:7 ratio of buckwheat flour and indigenous highland varieties, aged at low temperatures, and seasoned with rock salt.

Soba Club Sasaki's soba noodles are made with small native species grown in the highlands. Whole wheat flour is mixed and ground in a stone mill except for the outer shell.
The soup made with Okubo soy sauce and dashi made from carefully selected ingredients is truly exquisite.
If you eat it with rock salt first, you can fully enjoy the flavor of soba.
