The defining feature of Tomonoura Uodokoro Taitei's sea bream rice is, without a doubt, the fresh sea bream and its carefully crafted dashi broth. The sea bream is caught fresh in the Seto Inland Sea and carefully prepared. The broth is made with a base of stock extracted from the sea bream's head and bones, and is further enhanced with kelp and bonito flakes.

The signature dish is the all-you-can-eat sea bream set meal, "Tai Jiman." This dish features fresh sea bream sashimi and a roughly simmered dish that brings out the flavor of the bones, all in one dish.
